POTATO LEEK SOUP
I make this soup all the
time but I never measure so can not give exact amounts.
ingredients
potatoes peeled
and cut in half if large
leeks chopped
onions , sliced
, diced , however you like
chicken broth
, canned or make your own
heavy cream
salt
pepper
Put leeks , potatoes , and onions in a pot . Add enough chicken broth to at least cover potatoes
, leeks and onions then simmer. When potatoes are soft, mash everything in the pot with a hand masher and add heavy
cream , salt and pepper to taste. That's it , sometimes I add a little butter or margarine for flavor but it is not necessary.
This creates a nice white base for soup , we will often add clams , corn , and other sea food and turn it into a chowder. Add
broccoli and its cream of broccoli soup. Really we use this recipe to make just about cream of anything. If you do not want
the cream however, the soup is still pretty good without it, add a few extra potatoes and they will thicken it when you mash
everything together. Some have told me you can add yogurt instead of cream , but I have never tried it that
